Developed by Nicols from humble beginnings, Café Royal became famous for having what was once called "the greatest wine cellar in the world." By the 1890s, it had evolved into a social hub for artists, writers, politicians, and royalty. Regular patrons included Oscar Wilde, Winston Churchill, Virginia Woolf, George Bernard Shaw, the future Edward VIII and George VI, and later personalities like Mick Jagger, Elizabeth Taylor, Muhammad Ali, and Diana, Princess of Wales. Its Grill Room (now Oscar Wilde Lounge) witnessed historic moments, including Wilde's fateful libel case advice in 1895.
The building is Grade II listed, with its original Victorian interiors featuring gilded ceilings, ornate mirrors, and marble meticulously restored during its transformation into a luxury hotel (2008 to 2012). Renowned architect Sir David Chipperfield, alongside Donald Insall Associates, seamlessly merged heritage spaces with contemporary elegance, while Italian designer Piero Lissoni crafted sleek modern interiors across restaurants and the lobby.

Part of The Set Collection, which also includes the Conservatorium in Amsterdam and Lutetia in Paris.
